A distinctive organic white wine that showcases the versatility of Palomino Fino beyond Sherry. Sourced from two organically farmed vineyards on Cádiz’s famous chalky albariza soils, the wine is aged on its lees before spending 12 months in American oak casks that previously held Manzanilla, adding remarkable complexity without overwhelming the fruit.

The nose is layered with mineral notes, fresh bread, sea breeze and delicate citrus. On the palate it is bone dry, textured and elegant, with flavours of orchard fruit, subtle oak, savoury flor character and a distinctive saline finish that reflects its Atlantic coastal origins. Long, refined and refreshingly different, this is an ideal partner for oysters, grilled fish, shellfish, creamy seafood dishes or mature cheeses.
